What should you write in an anniversary card? Every person is unique in personality and experiences and how you express your love should be congruent with both. So this is what you do think about something you like (i.e. the beach, baseball etc) then think of something that you adore about your wife, husband etc and explain the desired attribute using what you like as a parallel.
